Another event during the VIS food&wine summer program: “The Tasting Tour” at the Acetaia @[La Vecchia Dispensa](urn:li:organization:10334320) in Castelvetro.
Located in a high and ancient tower, we had an impressive experience by receiving tons of notions regarding the preparation of the Emilian product that now is known as worldwide excellence.
We learned how to distinguish between a good vinegar and a more commercial one, that the wood of the barrel imparts aroma to the fluid, and how the batteries and abbess system works; it makes you realize how much tradition, passion and patience above all this job does require.
